Darya's Lemon Yoghurt Cake

When life gives you lemons, make this delicious light teacake! Darya's recipe is a simple, easily made lemon cake which is likely to become one of your favourites. 

Ingredients:
1 cup almond flour
1 cup spelt flour
4 eggs
3/4 cup plain unsweetened yogurt
4 Table spoons maple syrup
1/2 cup coconut oil
1 teaspoon baking soda
1 teaspoon vanilla essence
grated zest of two lemons
Recipe:
1. Mix all together in a bowl or a food processor and bake on 180c for 30-40 min or until a wooden skewer comes out clean
2. Cool and serve with blueberry compote or lemon mascarpone
